Cookies Ingredients - Organic Whole Foods

Incalculable Value of Unrefined Foods

The use of organic whole wheat flour (vs wheat flour aka plain flour) brings about invaluable nutrients to our body. Often, wheat is stripped of its essential value and then turn into plain flour that goes into our baked goods - bread, cookies, cakes and various pastries. Look at the whole wheat seeds comprise dozens of minerals and microminerals if grown in rich soil (ie organically). They also contain immuno-protective phytonutrients as well as vitamins and precious oils. All these nturients are lost when these whole wheat seeds/berries are refined to obtain "white" flour that is normally used.

To illustrate how important the nutrients in whole wheat can be, let's look at two minerals that are lost in the refining of whole-wheat berriens.

1. Selenium
A 1996 study reported in the Journal of the American Medical Association suggests that selenium can cut certain cancer death rates by fifty percent. Other health functions include:
- Selenium deficiency can cause hypothyroidism or low thyroid.
- Obesity and low thyroid are directly related. Selenium influences the transformation of thyroxin (T4) into triiodothyronine (T3), which makes possible the metabolism of nutrients. Thus, if selenium is deficient, sluggish metabolism results and weight gain is more likely.
- Toxic heavy metals such as lead and mercury can be bound up with selenium, and thereby become harmless.
- Premature aging, heart disease, arthritis, and multiple sclerosis are frequently related to selenium deficiency.

2. Magnesium
Magnesium provides the body with a smooth, flowing nature and therefore is useful for many diseases where there are stagnancies or erratic changes.
The healing properties and uses of magnesium-rich foods include: (just to name a few)
- Calming nerve function
- Harmonize various mental and emotional imbalances, including irritability, depression, bipolar disorder, sleep disorders, and PMS (pre-menstrual syndrome)
- Relax functioning of the muscles, including the heart muscle
- Create better flowsin digestion to help relieve constipation

Another whole grain used - Oats, which is ideal for preventing infections and contagious diseases, especially in children. Oats contain phosphorus which is required for brain and nerve formation during youth.

Oats' Healing Properties:
-Warming thermal nature
- Restores nervous and reproductive systems
- Strengthens spleen-pancreas
- Help renew the bones and all connective tissue

Sea salt. You would wonder what's the difference between sea salt and normal table salt. Basically, they aren't that different in chemical composition - they are mainly sodium chloride. 96% in sea salt vs 99.9% in table salt. The intricate difference lies in the trace minerals (including iodine) and zero additives in sea salt.

Iodine, a mineral needed for proper thyroid function, is less stable than other minerals and it dissipates from mined, refined, washed, or kiln-dried salt (ie table salt). Moreover, when table salt is enriched with iodine, even more chemicals must be added to stabilize the iodine and to prevent it from turning purple.
